NY Resolution #2: BE in Shape

As part of this blog, I’d like to have music, books, and food recipies that I think will do well for others, as I’m working on doing well for myself. So I will be adding my dinner recipe for last night which was BEYOND tasty, and very healthy. I’ve discovered the joys of cilantro and quinoa- two key ingredients for taste and nutrients that every kiddo needs. Last night was:

Clean Eating Quinoa with salt and pepper zucchini and mustard tuna. AWE-SOME. If you want to try it, I recommend all three.

Ingredients 1 tablespoon vegetable oil
2 tablespoons lime juice
1 teaspoon Worcestershire sauce
1 1/2 teaspoons dry mustard
1 1/2 pounds skinned albacore tuna steaks or loin cuts, 1 inch thick
2 tablespoons grated lime peel
How to make Easy Broiled AlbacoreCombine oil, lime juice, Worcestershire sauce and mustard in small bowl to make basting sauce.
Arrange albacore on well-greased grid.
Baste with sauce.
Grill, 4 to 5 inches from medium-hot coals, 6 to 8 minutes, turning fish halfway through cooking time and basting frequently.
Albacore should be pink in center when removed from heat.
Top with lime peel.

Clean Eating Quinoa Salad Recipe:

3 cups quinoa, rinsed
2 cups cooked black beans
1 pint grape tomatoes, cut into quarters
1 ½ cups fresh cilantro, chopped
1 cup frozen corn, thawed (you can also use canned or fresh)
1 cup roasted red pepper, chopped
¼ cup olive oil, best quality


4 limes, juiced
Zest of 1 lime
¼ cup white balsamic vinegar
2 T balsamic vinegar
6 cloves garlic, minced
Sea salt
Black pepper
1/8 tsp ground chipotle pepper


Bring a pot of water to boil and add quinoa. Boil for 10 minutes. Drain quinoa into a fine metal colander.
Bring a small amount of fresh water to boil. Place quinoa over it in the strainer. Cover with a clean kitchen towel and lid. Steam for 10 minutes. Remove from heat.
In a large bowl mix beans, tomatoes, cilantro, corn and red peppers.
Place dressing ingredients in a blender and combine.
Add cooled quinoa to the bean mixture. Toss with dressing and top with diced avocado.

A super healthy, super tasty dinner…how about them tuna?
